It was Sunday morning and just when I was about to get out of my house compound, I felt the sky dripping. Geeze, it was raining early in the morning. Guess I have to forget about going out for jogging this morning.
As the clock ticking, the rain get heavier and heavier and eventually it was raining like shit outside there. For most people, they must have had a nice sleep along the rainy Sunday morning.
I was hungry and I really need food so I went to a nearby coffee shop to charge up some energy and went to the wet market for some shopping.
I wanted to cook curry chicken today. Must be a good idea to have some nice hot and spicy dish on a cold rainy day. So, I get everything needed there, chicken, curry sauce etc etc.
So, let see what is the ingredients needed for today's curry chicken;
1/2 chicken cut into bite size.
1 pack of A1 instant chicken curry sauce.
3 large potato cut into desired size.
10 shallot (small onion la) chopped.
5 garlic chopped.
4 lemon grass.
1 cup of coconut milk.
some curry leaves.
Oil.
There is it, all the required ingredients to cook my curry chicken for the weekend. Since I don't really know how to make the curry sauce from raw chilli and curry powder, using the ready made curry sauce would be my ingenious solution. Maybe next time, I need to learn from the expert to cook a proper curry.

Argh, this is the nightmare which always get me crying. Chopping shallots. The vapour from these little onions are so venomous that once attacked your eyes, you going to cry like never before.

And finally, Everything is set for the dishes. Next, lets get started to cook the curry chicken.

First of all, heat up the pot and pour some oil. Once the oil is heat up, pour in the chopped shallot and garlic. Mix it well for a minute.

Next, put in the lemon grass and curry leaves and mix it well until you could smell the fragrance of the onions and lemon grass.

Put in the A1 curry sauce and stir everything up. Ah, look at the reddish curry sauce.

Next, put in the potato, stir it with the curry sauce and cook it for 2 minutes.

And here goes the chicken.

And finally, pour in the coconut milk into the pot. Stir and mix everything properly and cook it for about 20 minutes with low heat.

Woah, there is my delicious curry chicken. But hey, what is that thick layer of oil doing over there on top of my curry?!
Well, next time, got to pay attention about those excessive oil. There is quite an amount of oil presense in the pack of curry sauce, should eliminate that before pouring into the pot. And since the chicken a coconut milk also would produce some oil, must try to reduce the amount of oil poured into the pot during cooking.
Ultimately, the curry chicken turn up to be pretty nice. Ah, I wish I have some bread to eat along with the curry chicken.
